The batter will be thick, but don’t worry, that’s how it’s supposed to be.

Next you want to gently fold in the blueberries, being careful not to overmix the batter.

Next, fill your muffin trays 3/4 full of the batter. For an extra touch of yumminess, add 1/4 tbsp of butter on top of each muffin, and sprinkle with cinnamon sugar. The butter will help the muffin tops crisp up and give them a delicious, buttery flavor.

Ingredients
  

Blueberry muffin batter

  • 3 cups all-purpose flour
  • 1 1/2 cups sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 2/3 cup vegetable oil
  • 2/3 cup milk
  • 1 1/2 cup fresh blueberries

Blueberry muffin topping

  • 2 1/4 tbsp butter
  • 1/4 cup sugar
  • 2 tsp cinnamon

Instructions
 

  • Pre-heat oven to 400 degrees

  • Mix all of your dry ingredients together
  • Add all of the wet ingredients and mix well, batter will be thick
  • Gently fold in blueberries
  • scoop into muffin tray

  • add 1/4 tbsp butter onto the top of each muffin
  • sprinkle each muffin with the cinnamon sugar mixture
  • Bake at 400 degrees for 25 minutes

Notes

I used a large muffin tray for this recipe.  If you want to make them cupcake size, use a little less butter on the topping for each.
