Yes, I have always baked with salted butter.  I didn’t want to have to keep two types of butter on hand to make cookies.  If you choose to use unsalted butter in your oatmeal raisin cookies, simply add 1/2 tsp of salt to your recipe.

Once you have all of your ingredients, cream the butter and the light brown sugar.  Once combined, add the eggs (one at a time), molasses and vanilla.  Mix until combined.  Add your dry ingredients, the flour, baking soda, cinnamon and old-fashioned rolled oats.  To achieve the perfect texture for these cookies, it’s important to not overmix the dough. Mix just until the ingredients are combined, and then gently stir in the raisins.

Preheat your oven to 325 degrees Fahrenheit. Use a cookie scoop or spoon to drop the dough onto a lined baking sheet, leaving about 2 inches of space between each cookie. Bake for 9-12 minutes, or until the edges are golden brown and the centers are still slightly soft. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

To store the cookies, allow them to cool completely before placing them in an airtight container. You can add a piece of bread to the container to help keep the cookies soft and chewy. Stored at room temperature, they will stay fresh for up to 5 days. You can also freeze the cookies in an airtight container or freezer bag for up to 3 months. To thaw, simply leave them at room temperature for a few hours or overnight before enjoying.

Ingredients
  

Wet ingredients

  • 2 sticks salted butter
  • 1 1/4 cup light brown sugar
  • 4 tsp vanilla
  • 1/4 cup sugar
  • 1 tbsp molasses
  • 2 extra large eggs

Dry ingredients

  • 2 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 2 tsp cinnamom
  • 2 1/4 cup old fashioned rolled oats
  • 1 1/2 cup soaked raisins

Instructions
 

  • Preheat your oven to 325°F (165°C).
  • Cream the butter, light brown sugar and sugar
  • Add one egg at a time
  • Add the vanilla and molasses
  • Add the flour, baking soda, cinnamon and rolled oats
  • Once dough is combined, add the raisins and gently mix in
  • scoop onto prepared baking sheet and bake at 325 degrees for 9-12 minutes
