Mix the flour, sugar, baking powder, salt and vegetable oil together.  Once that has mixed, take out 1 cup of the batter mixture.  Place that aside.  We will call this the crumb topping mixture.

To the original mixture, we will call this the starter batter.  Add the egg, vanilla and milk.  Mix until combined.

Pour the starter batter into an 8 x 8 baking pan.

Next you want to mix your crumb topping mixture that you put aside and add in the cinnamon.  Mix well.

Sprinkle the crumb topping mixture all over the cake batter.

Now you are ready to bake!  Place in a preheated oven f 325 degrees and bake for 25 – 30 minutes.

 

After baking and cooling the cake, take it to the next level by adding a delicious glaze. Simply mix confectioners sugar with water, and drizzle the mixture generously all over the cake to create a mouth-watering finish.

Ingredients
  

Starter batter

  • 2 cups all purpose unbleached flour
  • 3/4 cup sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 3/4 cup vegetable oil

Add wet ingredients after you have taken crumb topping out of the starter batter

  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup milk

  • 2 tsp cinnamon

Crumb cake icing

  • 2 1/2 tbsp confectioners sugar (powdered sugar)

Instructions
 

  • Pre-heat oven to 325 degrees
  • Mix together the flour, sugar, baking powder, salt and vegetable oil
  • Once that has been combined, take out 1 cup of the starter batter mixture, set aside (crumb topping mixture)
  • Add to the original starter batter the egg, vanilla and milk. Mix well.
  • Pour cake batter into a cake pan
  • Mix the crumb topping mixture with the cinnamon
  • Sprinkle the crumb topping mixture over the cake batter
  • Bake for 25-30 minutes or until a toothpick inserted into the cake comes out clean
  • While your cake is cooling, mix the icing. Take the confectioners sugar and mix with a little bit of water. Start with a teaspoon of water and add more as needed. You want it a thing icing consistency.
  • Drizzle the icing over your cake and serve
